Something I’ve realized about myself is that I just about always defer to making food from scratch.
Which is definitely a good thing a lot of the time. (Think homemade mac and cheese vs the blue box, homemade chicken soup instead of canned, and a homemade flavorful nutty rice pilaf as opposed to whatever comes out of the prepackaged variety.)
But on the flip side, I sometimes forget that there are shortcuts available that don’t necessarily compromise on flavor or nutrition. Such as rotisserie chicken, which is also great if you want to make homemade stock out of the carcass (but here I go with the homemade again, lol).

Another store-bought item that can be pretty delicious depending on the brand you go for is jarred marinara sauce. And it’s a great time saver instead of making it from scratch!
And of course there’s pasta, which is always good for making weeknight dinner pretty easy. These days you can find a pasta to suit just about any dietary needs, including gluten free and low carb, so feel free to use whatever works best for you.
Making use of items like this is what helps get a nourishing meal on the dinner table fast. (Faster than the family can even have takeout delivered!)
This meal is a crowd-pleaser and perfect for a quick weeknight meal. Have your hubby or the kiddos put together a quick green salad while you whip up this soup, and dinner is done!

- Penne pasta
- Olive oil
- Onion
- Red bell pepper
- Garlic
- Rosemary
- Thyme
- Marinara sauce

How to Make Chicken Parm Soup
- Cook the pasta. Cook the pasta to al dente according to the package directions; drain and set aside.
- Make the soup base. Heat the oil in a large saucepan over medium to medium-high heat. Add the onion and bell pepper and cook until softened but not browned, about 6 to 8 minutes, stirring occasionally. Stir in the garlic, rosemary, thyme, salt, and black pepper, and cook 1 minute more, stirring constantly.
- Add the liquids. Stir in the marinara sauce and chicken stock. Turn the heat up and bring to a simmer.
- Complete it with the finishing touches. Once simmering, stir in the cheese and chicken, and heat until warm, about 2 minutes, stirring frequently. Turn off the heat and stir in the pasta.
- Enjoy it. Serve Chicken Parm Soup with more grated Parmesan for topping.

Store this soup covered in the fridge for up to 4 days. Or freeze it for up to 3 months.

Variations on This Recipe
- Get in some greens. Stir in 6 cups of chopped baby spinach along with the pasta. Cover the pot and let the soup's heat wilt the spinach.
- Swap out the chicken for whatever protein you have. You can use 1 ½ pounds of lean ground beef instead. Or brown up some bulk Italian sausage and use that!
- Make it extra cheesy. Stir a little shredded mozzarella into each bowlful of Chicken Parm Soup right before serving.
- Add some crunch.If you love the crunch factor of regular Chicken Parmesan, serve this soup with a few croutons on top.

Ingredients
- ¾ pound penne pasta
- 2 tablespoons olive oil
- 1 large onion chopped
- 1 large red bell pepper chopped
- 4 large cloves garlic minced
- 1 tablespoon minced fresh rosemary
- 1 tablespoon minced fresh thyme
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 24 ounce jar marinara sauce
- 6 cups chicken stock
- 2 ounces freshly-grated Parmesan cheese plus more for serving
- 4 cups cooked chopped chicken a rotisserie chicken or leftover turkey work well here

- Substitute for Fresh Herbs: If you don’t have fresh herbs on hand, substitute 4 teaspoons of dried Italian herb mix instead of the rosemary and thyme.
- Serving Tip: For a pop of color, serve the soup with fresh parsley or basil on top.
